franco's tiramisu recipe

I thought I would share Franco's recipe for Tiramisu, since the holidays are coming up. I have seen lots of Americanized versions online, most with alcohol (which I have never seen here?), so I wanted to share my favorite recipe! :O)

INGREDIENTI:
500 G Mascarpone*
150 G Lady Fingers or Pavesini
3 Eggs (3 yolks, 2 whites)
2 1/2 spoons sugar
Caffé (make espresso, and let cool) about 3-5 shots
Cacao Powder
1 pinch salt

Beat the yolks with sugar, add the mascarpone and whip until creamy.
Whip egg whites with a pinch of salt, until peaks form. Add to mascarpone.
To make your bottom layer, very quickly dip the cookies in the espresso, and layer in the dish.
Once bottom layer is down, add a layer of the mascarpone.
Now, another layer of cookies. The further up you go, the more you want to soak the cookies (always quickly, a couple seconds per side). The coffee tends to run down the layers, and the top can get dry. You also don't want the cookies on the bottom to be super soggy.


Do about 5 or 6 layers. Finish the top layer with mascarpone. Then top the cake with the cacao. And chill. You can also add fresh whipped cream, before the cacao, if you really want to go wild. However, keep in mind the tiramisu won't keep as fresh, as long with fresh whip cream. You should add the whipped cream right before serving, if you choose to add it. Buon appetito!


*the brand matters. a bad mascarpone can be the death of your tiramisu. Franco recommends Optimus brand.

I used to hate Tiramisu-those Americanized versions are very thick and hard and alcoholly (if that's a word). I loved the tiramisu in Italy but now I'm back in the US with the bad Tiramisu that is too gross to eat.

I am not fond of foods with alcohol, in general. I like to keep the two separate. Eat a good meal, then drink the alcohol!

And yes, alcoholly is a word, in my book!

yum - sounds just like my Italian's recipe. :) honestly, as a general rule I dont like Americanized Italian food. Its just so much better in Italy!

I always thought that Tiramisu was supposed to have alcohol in it, apparently not though - OH just confirmed it should be alcohol free too. I like to keep food and alcohol separate too :)

Forget the whipped cream, an Italian man making Tiramisu for me would be the topping "on the cake"! You are a lucky girl! *and save the whipped cream for something else!* ;-)

I use Mr Bada-bing Bada-boom Nick Stellino's recipe for Tiramisu. Remember his cooking show on Channel 9? It calls for shaved chocolate instead of cocoa powder (waay better) and yes, Rum in with the coffee. It rocks! I get raves for it.

Italians are notorious for putting booze in their sweets. My mom would wet her layers of 'pan di spagna' with alcohol before putting pastry cream on them.
